In every seder, not only do we retell the story of our exodus from Egypt, we acknowledge and welcome the season of spring. In my family, which left Hungary during the war, it was tradition to dip potatoes in salt water because they were readily available and the spring greens had still to sprout. Now at our table we have both potatoes and parsley resting on the plate together.

On this seder plate the carved lines are covered with a deep green puddled glaze to excite and welcome spring; the season of rebirth.
